Enjoy a lovely

notable, that I considered shoving the rest of the classic chicken dishes I
love aside. Probably, but humor me for a moment. Four years on, I still think Jamie
olivers recipes pretty much the best chicken recipe of all time. It called for
roasting a chicken in a big pot with a pint of milk, a lot of lemon zest, a
cinnamon stick, and unpeeled garlic cloves. Milk, cinnamon, and chicken were
three things I wouldn't ever think to combine. And yet its very strangeness
enticed me. The first thing you need to do with Jamie’s Meals is give up on
cooking the meals in 15 minutes. It’s sort of fun to try it once or twice
with the timer going on your phone and Jamie does make it look easy on TV but
in reality these meals are more likely to take 20 to 25 minutes. Which in
fairness to Jamie Oliver is no time at all and less time than it takes to get
takeaway delivered. The good thing about Jamie’s Meals is that the
recipes are perfect for quick week night dinners. Unlike Jamie’s 30
Minute Meals the book doesn’t involve three course meals which is fine because
on a week night after work who wants to bother with starters and dessert.
Oliver has also tried to be a bit more health conscious with this book so
the mash has milk in and no butter and the Mexican tomato soup is thickened
with rice rather than cream. While usually I am all about flavour first I
have to admit it probably makes sense in a cook aimed for every day.

This recipe
has about a 15 min preparation time. And maximum it will take 2 hours for the

Ingredient:
1 large handful potatoes
Salt to taste
1 heaped
teaspoon turmeric
1 lemon
½ teaspoon
ground cumin
5 sprigs
fresh coriander
¼ red pepper
2.5 cm piece
fresh ginger
1
higher-welfare chicken breast
olive oil
sea salt
freshly
ground black pepper
Method :
- Make this recipe for one in a snug-fitting baking dish or to save on washing-up, a little tinfoil tray.
- Preheat the oven to 200°C/400°F/gas 6. Peel a large handful of potatoes, cut them into 2.5cm/1 inch cubes and put them into a pan of cold, salted water.
- Bring to the boil, simmer for a few minutes, drain and allow to steam in a colander.
- Put a heaped teaspoon of turmeric into a bowl and add the zest of 1 lemon, half a teaspoon of ground cumin, 5 sprigs of chopped fresh coriander, a quarter of a red pepper, roughly chopped, and a 2.5cm/1 inch piece of fresh ginger, peeled and finely sliced into matchsticks.
- Cut 3 slices off the lemon and set aside.
- Squeeze the juice from the remainder of the lemon into the bowl.
- Shake the potatoes up in the colander and add them to the bowl with 1 chicken breast, skin left on.
- Toss everything around with a splash of olive oil and season well with sea salt and freshly ground black pepper.
- Remove the chicken, put the potatoes into the tray in one layer, and top with the lemon slices and the chicken.
- Drizzle with olive oil and cook in the middle of the oven for 25 to 35 minutes.
