Ingredients:

Grilled Poblanos:
3 large poblanos
Canola oil
Salt and freshly ground black pepper
Bbq Onions:
2 sweet onions, skin-on, and cut into 1/4-inch thick slices
Canola oil
Salt and freshly ground black pepper
1 cup bbq sauce (or your favorite jarred variety)
Coleslaw:
3/4 cup mayonnaise
2 tablespoons sugar
1 teaspoon celery seed
3 tablespoons apple-cider vinegar
Salt and freshly ground black pepper
1 small head cabbage, cored, finely shredded
2 carrots, finely shredded
1/2 small red onion, thinly sliced
3 scallions, thinly sliced on the diagonal
Chicken:
2 tablespoons ancho chili powder
2 teaspoons ground cinnamon
2 teaspoons ground cumin
2 teaspoons light brown sugar
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
4 boneless, skinless chicken breasts (8 ounces each)
Canola oil
8 flour tortillas
2 grilled sliced poblanos
Barbecued onions
Coleslaw
Guacamole, recipe follows
For the poblanos:
Fire Roasted Green Chile Guacamole:
2 ripe Hass avocados, peeled, pitted and diced
1 poblano chile, roasted, seeded, peeled, and diced
1/4 cup finely diced red onion
2 scallions, finely chopped
2 fresh limes

Method:
  1. Brush the onions with oil and season with salt and pepper. 
  2. Place on the grill and cook until lightly golden brown and just cooked through, about 4 minutes per side. 
  3. Brush with some of the bbq sauce during the last few minutes. 
  4. Most of the skin should come off on the grill, but if not, take it off when the onions come off the grill.
  5. Whisk together the mayonnaise, sugar, celery salt, celery seed, vinegar and salt and pepper in a large bowl. 
  6. Add the cabbage, carrot, onion and scallion and stir to combine, season with more salt and pepper, if needed. Let slaw sit at least 15 minutes before serving.
  7. Heat the grill to high.
  8. Whisk together the ancho, cinnamon, cumin, brown sugar, 1 teaspoon salt and black pepper in a small bowl.
  9. Season top side of the breasts with the rub mixture, turn over and season the back with the remaining salt. 
  10. Drizzle with some of the oil and place on the grill, rub side down and grill until lightly golden brown and a crust has formed, about 3 minutes. 
  11. Turn the chicken over, close the lid and continue cooking until just cooked through, about 6 minutes longer. 
  12. Remove from the grill and let rest 5 minutes before slicing.
  13. Grill the flour tortillas briefly, just to mark and heat. 
  14. To build the tacos, fold each tortilla around some of the chicken, poblanos, onions, coleslaw and guacamole.
  15. Combine all ingredients in a medium bowl and season with salt and pepper.

Ingredients:

10 to 12 ounces spinach
Salt and pepper
2 teaspoons plus 2 tablespoons olive oil
1 clove garlic, peeled and minced or smashed
Salt and pepper
3 tablespoons butter, divided
2 whole chicken breasts (or 1 turkey breast)
4 large eggs, beaten
¼ cup grated Parmesan cheese, divided
4 tablespoons pine nuts, divided
4-inch sprig rosemary
5 or 6 fresh sage leaves
2 cloves garlic, peeled and smashed

Method:
  1. Heat oven to 375°.
  2. Remove any large stems from spinach if necessary. 
  3. Heat a 10-inch skillet over medium-high heat. Add 2 teaspoons olive oil. 
  4. When the oil is hot, but not smoking, add spinach and one clove minced garlic. Season lightly with salt and pepper and cook, stirring, until the spinach is completely wilted. 
  5. Set the spinach aside in a bowl and wipe out the skillet.
  6. Remove the bone from the chicken breasts (see note) and slice each breast horizontally almost but not quite all the way through and open like a book. 
  7. With a meat mallet (or the bottom of a coffee mug) pound each breast fairly flat, a little less than ½ inch thick. Set aside. 
  8. If using turkey breast, cut it in half first, then prepare each half as one chicken breast. Heat the 10-inch skillet over mediumhigh heat and add a tablespoon of butter.
  9. Beat eggs with a dash of salt and pepper until well blended. 
  10. Pour eggs into a skillet and cook, using a fork to loosen and lift the edges then tilting the skillet so uncooked eggs flow underneath. 
  11. When the eggs are nearly set, sprinkle with parmesan cheese and remove from heat.
  12. Squeeze spinach of excess liquid, and divide in half. Bring one breast in front of you on a work surface. Cut omelet in half and lay over the chicken breast. 
  13. Spread one half of the spinach over the omelet.
  14. Sprinkle with 2 tablespoons pine nuts. Pick up the close side of the chicken and roll it up so the chicken, egg and spinach are pinwheel fashion. 
  15. Roll chicken tightly and use kitchen twine to tie each end of the roll and at least two places in between. Set aside and repeat process with remaining chicken breast. Coat each roll with a tablespoon of olive oil and place in a roasting pan. 
  16. Sprinkle each roll with salt and pepper and tuck rosemary, garlic and sage around the rolls. Place little bits of remaining butter on top of the rolls.
  17. Bake for 40 minutes. Turn the rolls over and add the white wine to pan. 
  18. After 5 minutes, turn off the oven. Pour liquid out of roasting pan into a small saucepan (return chicken to oven). Bring the liquid to a boil and allow it to reduce to ½ cup. Remove twine from chicken, slice chicken and set slices on serving platter. Drizzle with reduced wine mixture and serve.
  19. Chicken breast bone: The bone will no doubt have quite a bit of meat left on it. 
  20. You can simmer it in water to use for the liquid pea soup or risotto.

Ingredients:

4 tablespoon(s) (extra-virgin) olive oil
4 (6 ounces each) boneless, skinless chicken breasts
2 tablespoon(s) chopped thyme leaves
 Salt and pepper, to taste
1/4 cup(s) pine nuts
3 cup(s) chicken stock
4 tablespoon(s) cold butter
1 medium red onion, finely chopped
3 stalk(s) celery, finely chopped
1/2 teaspoon(s) red pepper flakes
1/2 teaspoon(s) freshly grated nutmeg
1 cup(s) dried cherries
2 cup(s) plain couscous
1/2 teaspoon(s) ground allspice
1/4 teaspoon(s) ground cinnamon
1/4 cup(s) honey
2 scallions, finely chopped
3 tablespoon(s) flat-leaf parsley, finely chopped

Method:
  1. Heat 3 Tbsp. of the olive oil in a large nonstick skillet over medium-high heat. 
  2. Season chicken breasts liberally with half of the thyme, salt and pepper; add to hot skillet and cook 5 to 6 minutes on each side, or until inside is no longer pink. 
  3. Remove chicken to a plate and cover it with foil to keep warm.
  4. Toast pine nuts in a medium saucepan over medium heat; remove and set aside. 
  5. Add 2 cups stock and 1 Tbsp. of the butter to pot, and bring to a boil.
  6. Put the chicken skillet back on the stove over medium-high heat and add the remaining 1 Tbsp. olive oil.
  7. Add the onion, celery, red pepper flakes, nutmeg, salt and pepper, and sauté 3 to 4 minutes, or until celery and onions are tender. 
  8. Let it simmer until pan is almost dry, 1 minute. 
  9. Add the 2 cups of hot chicken stock and the dried cherries, and continue to simmer, about 5 to 6 minutes, or until about 1/2 cup of liquid is left in the pan. 
  10. Remove pan from heat, add remaining 3 Tbsp. cold butter in small pieces and whisk until it’s completely melted.
  11. In a medium saucepan, bring the remaining 1 cup chicken stock to a boil.
  12. Add couscous, allspice, cinnamon and a little salt. 
  13. Cover pot and remove from heat. Let it stand 5 minutes.
  14.  Drizzle honey over couscous and add pine nuts, scallions and parsley. Toss and fluff with a fork to combine.
  15. Serve chicken whole or sliced, with cherry sauce poured over and couscous alongside.

2 tbsp sunflower oil
1 onion, halved and cut into very thin wedge shaped slices
3 garlic cloves, finely chopped
1 tbsp fresh ginger, finely chopped
1 tsp cumin seeds
1 tsp coriander seeds
12 curry leaves
4 skinless, boneless chicken, about 450g total weight, trimmed of any excess fat and cut into 5cm chunks
1 tsp mild chilli powder
1 tsp paprika
1 tsp garam masala
½ tsp turmeric
600 ml chicken stock
230 g canned chopped tomatoes
50 g dried red lentils, rinsed in cold water
75 g spinach leaves, cut into thin strips
handful coriander leaves, chopped
cooked basmati rice, to serve

Method:
  1. Heat 1½ tablespoons of the oil in a large wide saucepan or sauté pan. 
  2. Tip in the onion, garlic, ginger, cumin, coriander seeds and curry leaves. 
  3. Fry on a medium-high heat until the onion is starting to go brown, about 4-5 minutes, stirring occasionally. 
  4. Pour in the rest of the oil, then add the chicken and stir fry for a few minutes until it is no longer pink.
  5. Mix in the chilli, paprika, garam masala and turmeric .
  6. Cover the pan and cook on a medium-low heat for 10 minutes 
  7. Stirring occasionally to scrape up the sticky bits from the bottom of the pan. 
  8. Stir in the stock, then the tomatoes and bring to a simmer. 
  9. Cover and simmer for 5 minutes, then stir in the lentils, bring up to a boil and simmer for about 20 minutes uncovered. 
  10. By now the chicken should be tender and the lentils cooked. 
  11. If not, cook a few minutes longer. 
  12. Scatter in the spinach and stir just until it has wilted, about 1 minute. 
  13. Remove from the heat. 
  14. Season with pepper and a little salt. 
  15. Serve scattered with coriander and accompany with basmati rice. 
Tips:

This is the perfect dish for making ahead  and the spicy flavours can develop all the more.
Instead of just using chicken, you could use a mix of breast and . Just make them up to the same weight called for in the recipe.
Only add the spinach at the last minute and try not to overcook it otherwise it will lose its bright green colour.
Season the lentils with salt towards the end of cooking as early salting can toughen them.
This is good served with basmati rice and a yogurt and cucumber raita.
