Grilled chicken breasts are like summer vacations. There’s just nothing not to like about them. They taste great, look great on the plate, and are downright healthy — leaving off the skin is a great way to cut calories and fat. They’re also quite easy to make. No worry, as with steak, about over or under-cooking, as long as you stay within a reasonable range on the grill (you sure don’t want them to dry out). In other words, you’ve got a little wiggle room.
And there are so many creative think international ways to make them. The boneless, skinless grilled chicken meat acts as a kind of sponge to soak up any flavor combo you care to switch up.
Of course grilled chicken breasts taste great plain, with just a little salt and pepper. But come on that’s no fun. Get a little fancy in the backyard this summer .For the first installment: chicken breasts, arguably one of the most difficult of the standard meats to grill. It's all too common of an occurrence to get dry, chewy, card boardy breasts. This is all correctable though, and chicken breasts can be fantastic on the grill, it just takes a little know-how.
Preparation Time :
This recipe has about a 15 min preparation time. And maximum it will take 2 hours for the total time . Here are my tips on how to cook the perfect grilled chicken breast .

Ingredients :

6 boneless skinless chicken breast , tender removed , 6 to 8 ounces each
2 quarts cold water
Salt to taste
¼ cup sugar
Fresh ground black pepper
2 tablespoon olive oil
1 cup water

Type of fire:

 Two-zone indirect
 Grill heat: medium-high

Method :

1. Place one chicken breast in a resealable plastic bag or between two pieces of plastic wrap. Using a meat pounder, rolling pin, or small skillet, pound chicken breast into an even thickness about 3/4-inches in height. Repeat with remaining 3 breasts.
2. To make the brine, in a medium bowl whisk together the the water, salt, and sugar until the solids are dissolved. Place the chicken breast slices in brine and refrigerate for 30 minutes.
3. Light one chimney full of charcoal. Preheat the grill to hot.
4. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes.
5. Clean and oil the grilling grate. Remove chicken breasts from brine, pat dry with paper towels, season to taste with salt and pepper, and brush lightly with olive oil.
6. Place chicken over hot side of grill and cook until well browned, 3 to 5 minutes. 
7. Flip and continue to cook until second side is browned and chicken registers 150°F (or 160°F if you really want to stick to FDA guidelines) on an instant read thermometer inserted into the center of breast.
8. If second side browns before it registers 150°F, move to cool side of grill, cover, and let cook until chicken reaches temperature. 
9. Remove chicken from grill, let rest for 5 to 10 minutes, then serve immediately
10. Allow the grilled chicken to rest for 5 minuter , covered , before serving
11. Serve with roasted onion tomato and onion sauce.
