This is a very easy but elegant recipe that looks like you've spent hours in the kitchen when you've barely lifted a finger. Split Chicken, nice and easy with the added bonus of flavorful and juicy when prepared on the bone.  Leave the skin complete as it will help to keep the chicken juicy. 
Chicken is a versatile food that can be cooked hundreds of ways. How to make split chicken breast recipe? It can be prepared with just a little effort. Shortening gives these classics a light crunch with a soft interior. Butter would turn them too flaky.  Here are ingredients and methods.

Preparation Time :

This recipe has about a 10 min preparation time. And maximum it will take 2 hours for the finishing point and it will get ready in maximum 2 hours. Here are my tips on how to cook the perfect Split  chicken breast and recipe is here to get you started .

Ingredients :

4 chicken breasts (with skin, on the bone)
4 – 5 cloves of garlic, minced
2 tablespoons olive oil
½ teaspoon salt
1 sprig rosemary
Fresh cracked black pepper
4 red potatoes, quartered
8 carrots, peeled
2 one inch wide slices of onion
Olive oil


Method :

1.        Pre-heat the oven to 425ºF.
2.        Wash and dry the chicken breasts.
3.        Separate the skin from the meat to create a pocket.
4.        Mince the rosemary. Add the rosemary to a small bowl along with the garlic, salt, pepper and olive oil.
5.        Stir to combine.
6.        Use about 1/6 of the olive oil mixture under the skin of each breast. Rub another 1/6 on the outside of the skin.
7.        Sprinkle with additional salt and pepper if you wish.
8.        Arrange the vegetables in the bottom of a roasting pan or casserole dish.
9.        Season with salt and pepper to taste. Place the chicken, skin side up, on top of the vegetables.
10.     Roast for 30 minutes at 425ºF.
11.     Cover with foil and return to a 375ºF oven for another 20 - 30 minutes. (Always check the temperature of your chicken at the thickest part, it should read at least 180ºF)
12.    Serve each person a breast, two carrots and four potato wedges.
13.    The liquid in the pan can be reduced and thickened slightly to be served as a gravy.
