This stuffed chicken breast make an easy weeknight recipe or
an impressive dinner for guests. Serve with brown rice and green beans to round
out the meal.I often turn
to chicken breasts for a simple, speedy weeknight dinner that doesn't involve
greasy takeout. But let's be honest: It can be boring. When I have to use up
the rest of the chicken in the fridge but I feel like I'd rather skip dinner
altogether than eat another bland, baked, lightly seasoned chicken breast, I
mix things up a little with this spinach, sun-dried tomato and goat cheese
stuffed chicken wrapped in a thin chicken breast.
If you want to trim the fat from
the recipe a little, pass on the prosciutto. But the entire dish is stuffed,
which means you don't get the added calories and fat of oil or butter used to
saute the chicken; all of the ingredients are fresh; and the recipe doesn't
call for an exorbitant amount of goat cheese because you really don't need much
when you're also stuffing the chicken with spinach and sun-dried tomatoes.
(Make sure you buy plain sun-dried tomatoes that aren't soaking in oil.)

Ingredients:
3 chicken
boneless skinless chicken breasts
2 servings
Stove Top Chicken Stuffing
¼ teaspoon
sea salt
¼ teaspoon
Mrs. Dash Lemon Pepper
¼ teaspoon
garlic powder
¼ teaspoon
black pepper
1 teaspoon
butter-semi melted
2 cup lower
sodium chicken broth
fresh black
pepper to taste
2 tablespoon
cornstarch
4 tablespoon
water
Method:
- Preheat oven to 400.
- Trim fat and wash chicken. Pound chicken to ½ inch thickness between wax paper.
- Prepare Stove Top Chicken according to package directions.
- In a small bowl combine sea-salt, Mrs. Dash Lemon Pepper,garlic powder, and black pepper.
- Sprinkle both sides of chicken breasts with mixture and rub it in.
- Add semi melted butter to the center of each chicken breast and stuffing to the center of each chicken breast and roll up.
- Place a toothpick or small skewer in to secure stuffing from falling out.
- In a glass baking dish add lower sodium chicken broth and sprinkle with fresh black pepper.
- Bake 30 minutes.
- Remove from oven and and pour broth into a small pot to prepare gravy.
- Put chicken back in the oven for 5 minutes.
- Prepare gravy by mixing cornstarch and water in a cup, add to pan of broth until thick.
- Mix well.
- Take the chicken back out, pour gravy over and bake an additional 10-15 minutes.
