Cooking oven chicken breats is one of those things that is so easy it's hardly worth talking about. But sometimes it comes out better than others, so I thought I'd share this one.Basically I mixed up some sweet rice flour, corn meal, salt, onion powder, garlic powder, and turmeric. The exact mix isn't important. I also used a little konjac (1/2 tsp) to help it stick, though I don't think it needed it, as it turned out.Then I coated the chicken breast in mayonnaise. Mayo makes rather nicely; that is what it is made for! Then I rolled it in the flour, and baked in oven at 350 til nicely browned and done inside. This made a nice crispy, but not greasy, crust.
In many of these kinds of recipes, buttermilk is used to help the crust stick. I don't use milk at all, so using the mayo made it easy. Possibly coconut yogurt would work too.Oven chicken breast is one of my ultimate comfort foods.  It’s so outrageously bad for you but so deliciously good.  I’m constantly searching for a worthy substitute that won’t clog my arteries.  I’d seen this one in an issue of Cooking Light but never got around to making it so I was pretty thrilled to get it for this week’s. Its delicious.

Preparation time :

This recipe has about a 10 min preparation time. And maximum it will take 2 hours for the finishing point and it will get ready in maximum 3 hours. Here are my tips on how to cook the chicken breast oven recipes and recipe is here to get you started .

Ingredients:

Cooking spray
1 1/3 cups crispy rice cereal
2 1/4 cups bagel chips or Melba toasts
5 teaspoons extra-virgin olive oil
3/4 teaspoon hot paprika
Kosher salt and freshly ground pepper
1 1/2 cups plain Greek yogurt (2%)
1 teaspoon dijon mustard
4 skinless, bone-in chicken thighs or halved bone-in breasts (about 6 ounces each)
2 bunches scallions
Harissa, chili sauce or ketchup, for the sauce

Method:
  1. Preheat the oven to 475 degrees F. Set a rack on a foil-lined baking sheet and generously coat the rack with cooking spray.
  2. Finely grind the cereal and bagel chips in a food processor and transfer to a large resealable plastic bag. Add 3 teaspoons olive oil, the paprika, 2 teaspoons salt, and pepper to taste and toss.
  3. Whisk 1/2 cup yogurt and the mustard in a shallow bowl. Add the chicken and turn to coat, then transfer to the bag; seal and shake to coat. Place the chicken on the rack and mist with cooking spray.
  4. Toss the scallions with the remaining 2 teaspoons olive oil and place alongside the chicken. Bake until the chicken is crisp and a thermometer inserted into the thickest part registers 160 degrees F, about 30 minutes.
  5. Make the dipping sauce: Mix the remaining 1 cup yogurt and harissa to taste in a bowl. Serve the chicken and scallions with the sauce.
