This simple recipe makes it easy to cook tenderlion on a weeknight. The combination of sweet, spicy and smoky flavors from orange, peppers and molasses is amazing in this recipe.This dish is so easy to make and comes together in a snap! The original recipe called for chicken tenderlion, but I switched out turkey and berry jam to use up some Thanksgiving leftovers. I was thrilled with how well it turned out.
They were super easy and had lots of flavor.  I paired it with my kids favorite side (butter egg noodles), a salad and fresh strawberries.  The recipe calls for chicken breast tenderlion but I used chicken tenderloins and they were the perfect size. Made this even easier to create.The tasty marinade of this recipe makes tenderloins even more tender and delicious, especially when grilled. A quick and easy main dish for the busy cook.On a chicken breast tenderlion there's a thin piece of meat barely attached, which is actually the most tender part of the chicken. However, the tenderloin can often get in the way when it comes time to pound or saute a boneless chicken breast. Instead of throwing these tasty pieces away, however, you can cook them separately or save them for stir-fries or to coat with a breading and fry to make chicken breast tenderlion recipes.

Ingredients:

4 turkey breast tenderloins (12 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1/4 cup chicken broth
Sauce:
1 tablespoon olive oil
5 shallots, thinly sliced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chicken broth
1/4 cup balsamic vinegar
3 tablespoons seedless raspberry jam

Method :
  1. Sprinkle turkey with salt and pepper.
  2. In a large skillet, heat oil over medium heat.
  3. Brown tenderloins on all sides in batches.
  4. Cook, covered, 8-10 minutes longer or until a thermometer reads 165°.
  5. Remove from pan; keep warm.
  6. Add broth to skillet; increase heat to medium-high.
  7. Cook, stirring to loosen browned bits from pan; remove from heat.
  8. Meanwhile, in another skillet, heat oil over medium-high heat.
  9. Add shallots, salt and pepper; cook and stir until shallots are tender.
  10. Add broth, stirring to loosen browned bits from pan.
  11. Stir in vinegar and jam.
  12. Bring to a boil; cook 4-5 minutes or until slightly thickened, stirring occasionally.
  13. Slice tenderloins; drizzle with pan juices.
  14. Serve with sauce.
